Understanding Communication

Chapter 12 of Supervision in the Hospitality Industry begins with "We human beings communicate all day every day." Communication occupies every waking hour we spend during our lifetime and if paid attention to closely enough will showcase, the ability to positively influence one another, promote synergy, efficiency in everyday work, camaraderie amongst one another, beauty in the food, and the utmost potential that our industry has. It is a beautiful thing. Understanding that message is a challenge.

A chef de partie of a particular station can reply, "Yes chef!" to the immediate supervisor overseeing the kitchen, to the sous chef or chef de cuisine, and not fully understand what is being asked of him or her. Over externship I was introduced to the phrase “I understand”. The difference between replying "I understand" and "Yes chef!" is tremendous. The ambiguity with simply replying "Yes chef!" is great, what does it honestly mean, "yes, what?". Saying one “understands” shows the depth in which you can take the project or task at hand, it shows you know more than just what is being asked for, a step closer towards perfection. It shows that you understand.

In attempts to understanding a message, a rational approach should be taken. Weighing positive and negative outcomes and only using material facts to clearly, sensibly, and logically in order to work towards a common goal are ideal.

As well as understanding the message, it is just as important to communicate your idea, task, or project directly in a concise manner. Tone, body language, eye contact, which words we choose, and the way we say them are things that we control. After working towards manipulating these fluctuating distractions of communication and we achieve the right balance that positively communicates, we will be able to effectively influence our peers and sub-ordinates.
